Ingredients

  • 2 cups leftover cooked steak, thinly sliced or small cubes

  • 3 cups cooked jasmine rice (preferably day-old)

  • 2 tablespoons vegetable oil or Ghee

  • 3 cloves garlic, minced

  • 1/2 cup peas

  • 1/2 cup small diced carrots

  • 3-4 tablespoons soy sauce

  • 1 tablespoon oyster sauce

  • 1 teaspoon sesame oil

  • 2 large eggs

  • 3 green onions, chopped

  • 1 tablespoon butter or more Ghee

  • Salt and pepper to taste

Directions

  • Prepare the Ingredients: 
    • Make sure the jasmine rice is cold to prevent it from becoming mushy. Day-old rice works best. 
    。 Slice the leftover steak into thin strips against the grain for tenderness.
  • Cook the Aromatics: 
    • Heat the vegetable oil in a large skillet or wok over medium-high heat. 
    。 Add the minced garlic and Sauté for 1 minute
  • Add Vegetables: 
    • Stir in the mixed vegetables and cook until they are tender, about 3-4 minutes. 
  • ncorporate the Rice: 
    • Increase the heat to high. Add the cold rice to the skillet, breaking up any clumps with a spatula. Stir-fry for about 5 minutes until the rice is heated through.
  • Flavor the Rice: 
    • Pour the soy sauce, oyster sauce, and sesame oil over the rice. Mix well to ensure all the rice is evenly coated with the sauces. 
  • Add the Steak: 
    • Push the rice to one side of the skillet. Add the sliced steak to the other side and let it heat through for about 2 minutes, then mix it into the rice.
  • Cook the Eggs: 
    。 Push the rice and steak to one side of the skillet again. Add the butter to the empty side and let it melt. 
    • Crack the eggs into the butter and scramble them until fully cooked. Once cooked, mix the scrambled eggs into the rice.
  • Finish with Green Onions: 
    。 Add the chopped green onions and stir everything together for another minute.
  • Season to Taste: 
    •  Taste the fried rice and add salt and pepper as needed.
