During this time of quarantine, we could all use a little comfort. Am I right? I believe this is it, this is comfort. Banana Bread with chocolate chips. I made this recipe years ago and have never looked back.
It is by far THE BEST! It’s moist, decadent, and decently easy. If you have little ones at home, you could make this together to help pass the time. Take the time to teach them about kitchen safety and measurements. Hey, it counts as math right? Or even Home Economics!
It’s something that they don’t learn behind a desk at school so take advantage of this opportunity. May this recipe bring you a sense of calm and comfort while we all navigate through this sensitive time. I hope you enjoy this as much as my family does! Enjoy!
Ingredients:
1/2 cup of melted butter (cooled)
1//2 cup of white sugar
1/2 cup of Brown Sugar
2 eggs
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 cup sour cream
1/2 – 1 cup of chocolate chips. (However much you prefer)
2 medium bananas mashed
Directions:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9×5 inch loaf pan. I even use parchment paper so it easily comes out of the pan.
- In a large bowl, stir together the melted butter and sugars. Add the eggs and vanilla, mix well. Combine the flour, baking soda, and salt, stir into the butter mixture until smooth. Finally, fold in the sour cream, chocolate chips, and bananas. Spread evenly into the prepared pan.
- Bake at 350 degrees F (175 degrees C) for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.
