Ingredients

  • 350g orecchiette pasta 

  • 150g pancetta, diced 

  • 1 cup frozen green peas 

  • 1 cup heavy cream 

  • 1/2 cup reserved pasta cooking water 

  • 2 cloves garlic, minced 

  • 1/2 cup grated Parmesan cheese 

  • Salt and black pepper, to taste 

  • Fresh parsley, chopped (for garnish) 

  • 1 tablespoon Extra virgin olive oil 

  • 1 tablespoon butter 

Directions

  • Cook the Orecchiette: Bring a large pot of salted water to a boil. Add the orecchiette pasta and cook according to package instructions until al dente. - Reserve 1/2 cup of the pasta cooking water before draining the pasta. Set aside.
  •  Prepare the Sauce: In a large skillet, heat a drizzle of olive oil & butter over medium heat. Add the diced pancetta to the skillet and cook until it becomes crispy and golden brown, about 5-6 minutes. Add minced garlic to the skillet and cook for another 1-2 minutes until fragrant.
  • Combine Pasta and Sauce: Pour in the heavy cream into the skillet with the pancetta and garlic. Stir in the frozen green peas and let the sauce simmer gently for 3-4 minutes, allowing the flavors to meld together. Season the sauce with salt and black pepper to taste.
  • Finish the Dish: Add the cooked orecchiette pasta to the skillet with the creamy sauce. Toss the pasta gently to coat it evenly with the sauce, adding a splash of the reserved pasta cooking water if needed to loosen the sauce and create a creamy consistency. Sprinkle grated Parmesan cheese over the pasta and toss again until the cheese melts and the sauce coats the pasta beautifully.
  • Serve: Transfer the creamy orecchiette with pancetta and green peas to serving plates or bowls. - Garnish with chopped fresh parsley for a pop of color and freshness. Serve hot and enjoy your delicious homemade pasta dish!
