Ingredients
4 TABLESPOONS EXTRA VIRGIN OLIVE OIL
1 PACK SPAGHETTI OR PASTA OF CHOICE
4 CUPS CHERRY/GRAPE TOMATOES, IN HALF
4 CLOVES GARLIC, SLICED OR MINCED
1 TSP. CRUSHED RED PEPPER (ADJUST BASED ON PREFERENCE)
1 LARGE HANDFUL FRESH BASIL
1/2 CUP PASTA WATER
2 TBSP. GRASS FED BUTTER
PARMIGIANO REGGIANO, FRESHLY GRATED

Directions
- In a large pot bring, bring water to a rapid boil.
- Salt water like the sea and drop in your pasta of choice. Stir to ensure even cooking.
- Cook pasta 1 minute less than package directions.
- In a large pan, add in olive oil, garlic, pepper flakes, and sliced tomatoes. Cover and cook for about 5 minutes on medium heat.
- Use the back of your cooking spoon to break up a few of the tomatoes to let the juices out.
- Add butter and pasta water.
- Use tongs to transfer pasta directly from the pot into the sauce.
- Add in fresh basil leaves and toss to combine everything.
- Garnish with cheese and serve immediately.
Notes
- TIPS: You must heavily salt your roiling boiling water right before you drop your pasta in
Make sure to finely grate your block of good quality Parmesan cheese. If you don't, the cheese will not melt
properly and the sauce consistency will be off.
