This cream of asparagus soup recipe is perfect for making the MOST of your fresh asparagus when it’s in season — It’s also the best thing to make when its about to turn and may not last any longer.
This bright and creamy soup will liven up any meal! It is also a great alternative to tomato soup & goes great with grilled cheese too!

Ingredients:
- 1 pound fresh asparagus, trimmed and cut into 1 inch pieces
- 1 (14.5 ounce) can chicken broth, divided
- 1 tablespoon olive oil
- ½ cup chopped onion
- 2 cloves grated garlic
- 1 medium carrot
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 -2 teaspoon salt
- 1 pinch ground black pepper
- 1 cup milk
- 1/4 cup sour cream
- 1/4 cup heavy cream
- 1 teaspoon fresh lemon juice
Directions:
- Combine olive oil, onion, garlic, carrot and asparagus in a sauce pan. Sauté for about 6-8 minutes, until the vegetables are soft but the asparagus is still bright green. Add 1/2 cup chicken stock and cook on high heat for another 2 minutes.
- Transfer the mixture to a blender and puree until smooth. Set aside.
- In the same saucepan, melt butter over medium-low heat. Stir in flour, salt, and pepper; cook, stirring constantly, for 2 minutes. Increase heat to medium; add remaining chicken broth, stirring constantly, until the mixture boils. Stir in pureed asparagus and milk.
- Place sour cream in a small bowl and stir in a ladleful of hot soup until blended; pour into the soup and stir in lemon juice. Warm soup through to serving temperature, without boiling. Add in heavy cream. Combine. Serve immediately.
