Ingredients

  • 1 cup coconut cream

  • 1/2 cup Greek yogurt

  • 1/4 cup finely grated fresh coconut

  • 2 tablespoons honey

  • Zest of 2 limes

  • Juice of 1 lime

  • 1 tablespoon finely chopped fresh mint leaves

  • 1/2 teaspoon vanilla extract

  • Pinch of sea salt

  • Optional garnish: toasted coconut flakes, lime zest, and mint sprigs

Directions

  • In a medium mixing bowl, combine the coconut cream, Greek yogurt, honey, the zest of 2  limes, the juice of 1 lime, vanilla extract, and finely grated fresh coconut. Mix until smooth and well-blended. 
  • Add a pinch of sea salt to balance the sweetness. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, allowing the flavors to meld together beautifully.
