Ingredients

  • 1 large carrot

  • 2 large handfuls of broccoli florets

  • 2 cloves garlic

  • 2 scallions

  • salt & pepper to taste

  • 2 cups of jasmine rice (cooked ahead of time) (cooled)

  • 3-4 tbsp ghee

  • 3-4 tbsp soy sauce or according to taste

  • 3 eggs

Directions

  • Cut up carrot & broccoli into small dices.
  • Mince garlic and slice scallions.
  • Cook jasmine rice in rice cooker or on stovetop and let cool a bit before frying it with the other ingredients. It can even be cold from another meal.
  • Whip up eggs in a bowl.
  • Add one tbsp of ghee to a wok or large skillet.
  • Sautee veggies until they are a little soft.
  • Remove vegetables from wok onto a sperate plate and set aside.
  • Add 2 tbsp of ghee to wok and add in cooked rice. Make sure the rice is coated in the butter. Add in slat & pepper, garlic, and scallions. Cook for about a minute.
  • Push rice to the sides of the wok to make a well in the middle. Add in eggs and mix well with the rice.
  • Add soy sauce.
  • Add vegetables back in.
  • Make sure everything is well incorporated.
  • Garnish with green scallions.
