Ingredients

  • 11/2 cups all purpose flour

  • 1/4 cup cocoa powder

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1 cup baby spinach leaves

  • 1/2 cup water

  • 1 medium banana

  • 1 cup whole-milk plain yogurt

  • 1/2 cup maple syrup

  • 2 eggs (large)

  • 1 stick real butter (melted and cooled)

  • 2 tsp vanilla extract

  • 1/2 cup (or more!) semi-sweet chocolate chips

Directions

  • Preheat the oven to 350F. Grease a 12-cup standard muffin pan with nonstick spray.
  • In a medium bowl, stir together the yogurt, maple syrup, eggs, butter, and vanilla until well combined. Add into dry ingredients.
  • Gently stir in the spinach mixture.
  • Add in chocolate chips.
  • Make sure all ingredients are well combined.
  • Divide batter among the prepared muffin tin, using a heaping 1/4 cup batter in each cup.
  • Bake for 12-16 minutes, or until the toothpick, inserted in the middle comes out clean. Remove from oven, then transfer to muffins to wire rack to cool.
