Ingredients
11/2 cups all purpose flour
1/4 cup cocoa powder
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup baby spinach leaves
1/2 cup water
1 medium banana
1 cup whole-milk plain yogurt
1/2 cup maple syrup
2 eggs (large)
1 stick real butter (melted and cooled)
2 tsp vanilla extract
1/2 cup (or more!) semi-sweet chocolate chips
Directions
- Preheat the oven to 350F. Grease a 12-cup standard muffin pan with nonstick spray.
- In a medium bowl, stir together the yogurt, maple syrup, eggs, butter, and vanilla until well combined. Add into dry ingredients.
- Gently stir in the spinach mixture.
- Add in chocolate chips.
- Make sure all ingredients are well combined.
- Divide batter among the prepared muffin tin, using a heaping 1/4 cup batter in each cup.
- Bake for 12-16 minutes, or until the toothpick, inserted in the middle comes out clean. Remove from oven, then transfer to muffins to wire rack to cool.
